Make CUPCAKES not War ! :)

For some time i have been looking for some recipe for cup cakes i wanted some that would be easy fun and also i heard that cupcakes ten to be drier inside soiwas looking for some where the dough would be moist and soft…
And i found it !

I found this amazing Czech food blogger and her blog where she has many many recipes and reviews and i would say other different food adventures πŸ™‚

I fell in love with her cupcakes they were so cute πŸ˜€ so i just had to try and see if I can make them too πŸ™‚

And also i was more than excited because apart from the butter cream which i know she had lighter alternative using vanilla pudding πŸ™‚

So here is the recipe πŸ™‚

For the cupcakes u need:
113g of softened butter
130g of granulated sugar
3 eggs
1 spoon of vanilla esence or better half of the vanailla pod
60ml of milk
100g plain flour
Pinch of Salt
1.5 tea spoon of baking powder
Lemon zest

Preahet the oven for 175Β°C. Whisk the butter till its soft and has sortbof mousse like consistency  add the sugar and whisk again .. Add eggs and vanilla and mix again. Mix the flour, baking powder and Salt together. Slowly add approximately half the powder ingredients into the mixture and then milk and mix it together and  add the second half of the powder ingredients.
Put into paper cups or baking mold and put into oven for 17-20mins and check with toothpick if they r ready. Just poke into one to see if some of the dough sticks to the toothpick. If it does give them a minute.

For the butter cream u need :
230g of fine sugar (or icing sugar)
115g of butter
Half vanilla pod or spoon of vanila essence
2-3 spoons of milk

Whisk the butter till it is soft and mousse like add the sugar and mix again till its soft and creamy and then add vanilla and finally the milk. If u r using some kind of kitchenwear (which by the way is not just quicker but easier πŸ˜‰ ) put it on the high speed dont worry πŸ™‚

The butter cream will become sort of solid  in frigde so all the other decorations u will stick to the cupcake will stay in place:)

For the pudding cream u need :
200ml of milk
20g of pudding powder
125g of butter
100g fine sugar
Vanilka pod

Whisk the butter till it is soft and creamy and add the sugar. Make the pudding from 200ml milk and 20g of pudding powder. When the pudding is done let it cool down but dont forget to keep whisking it. When the pudding is cooled slowly add it into the butter mixture and mix it well togehter.
Personally i prefer this one over the butter its lighter and for me the taste is better too.
